This Dexter-Russell Basics Cleaver DR149542 arrived promptly and in excellent condition. It is well made with three rivets attaching the attractive, wood handle to the one-piece stainless steel tool. It has a definite heft to it which will ensure that it will cut efficiently. The cutting edge is almost razor sharp. Exercise caution! The 1/2 inch diameter hole for hanging makes it much easier to utilize that feature than the much smaller hole in most other tools. Also, the stainless steel is polished to an almost mirror finish making it an attractive addition to my hanging tool rack.I purchased this (my first) cleaver for cutting steak, as recommended by Chef John, into ground hamburger-size pieces because I have been using a knife for that and always end up with unsatisfactory results.My only negative about this particular cleaver, and it is a big one, is that it is made in China! I wanted one made in America, but good ones start at twice the price of this one. I am a retired man who will use a cleaver infrequently and therefore this tool will long outlast me.Unfortunately I cannot attest to how well this cleaver works because I have not used it. The cleaver has solid forward weight and remains sharp through plenty of mincing/slicing. [This review was collected as part of a promotion.]
Forged German stainless steel feels toe-balanced upon "swinging"...which is great when having to cleave a lot. The handle sits in palm well..no slippage.
I love using this cleaver to get through all different kinds of meat and the more weight of it make it easier. The handle is so comfortable and I can get a good grip on the knife so that I feel very secure.
This cleaver can get through meat, bone, tendons, really anything. It is made from German Special Formula Steel, also forged from one piece of steel so durable for a lifetime. It is also ice hardened so blade will stay sharper for a longer period. The handle is comfortable and lightweight, a nice option compared to other heavy handle knives.
Perhaps my expectations were off, but I was looking for a heavy cutting implement to make my way through very heavy gourds and bone. The edge seemed dull compared to my Chef's knife (my go to standard). The Chef's actually works better and provided better control.
