Victorinox 8" x 3" Cleaver Knife, Chinese, Black Nylon Handle, 41589. Durable nylon handle is NSF approved and dishwasher safe. Even though all nylon handles are dishwasher safe, hand-washing is recommended to prolong the finish of the handle. A cleaver is a large, rectangular knife that is used in cutting meat. Very heavy, enabling the knife to cut through bone and joints with sheer force. Some models have a hole in the end to allow them to be hung up easily. Cleavers are an essential tool for any restaurant that prepares its own meat.

This makes my past two cleavers look like butter knives! It makes all my chopping so much easier. I do wish it were a bit heavier, but I'd rather have sharpness than weight. Now the only question is how long will it stay sharp, and how will things go after sharpenings.
